Healthy Cashew Cookie Dough Bites
Hi Friends!
Cravings are a tricky thing. We may be having cravings because we need to nourish our bodies with nutrient dense food. We may also have cravings because we are tired, need rest, or need some quiet time. Many times we are just filling a hole in our lives because we feel loneliness, boredom, stress, sadness or any other emotion that is not really hunger.
If you find you cannot delay the habit or want to give in, try these treats to get a small amount of sweet, but also get the benefits of eating cashews and staying healthy. Cashews are a great snack when eaten in moderation and have heart healthy and cancer preventing benefits.
This recipe is so easy, it actually took me longer to clean the food processor than to make them. Mike opted for these for his birthday instead of birthday cake this year. It saved us all from eating too much cake and frosting (my downfall).
Healthy Cashew Cookie Dough Bites
Makes 6 medium size bites
Ingredients:
1 cup raw cashews
1 tablespoon 100% pure maple syrup
1 tablespoon coconut or almond flour (to help them bind and be less sticky)
1/4 teaspoon salt
Blend all ingredients in a food processor. You will have to scrape the sides with a spatula and re-blend.
Roll the cookie “dough” into approximately 1 inch balls
Let sit in the refrigerator for 30 minutes.
Enjoy! Remember to be mindful and savor each bite slowly. That will help you not only enjoy the flavors more, but help you not over indulge.
